Restaurant inspections: Papa Gallo, Antonio’s To Go, different cited Sept. 27-Oct. three – syracuse.com

Here are the food service inspections reported by the Onondaga County Health Department from September 27 to October 3:

Papa Gallo Mexican Restaurant

205 W. Genesee St., Fayetteville

Inspection done 4 p.m. September 29, 2020

Critical violations: Approximately four pounds of black beans cooling in steel pan at depth of six inches and temp of 115 degrees in walk-in cooler (corrected – product discarded). At start of inspection, numerous employees not wearing masks as required.

Violations: Numerous food service products stored on floor in back storage room. Numerous cutting boards found with deep gouges and heavily stained. At three-bay sink, sanitizer chemical not dispensing properly. Fronts and sides of cookline equipment, lower shelves of preparation tables, some sinks and refrigeration found non-food surfaces dirty. Some low coolers have standing water. Some wire shelving in refrigeration and other storage areas corroded.

Floors in walk-in freezers and both walk-in refrigerators, under racks at dry storage, under cookline, under three-bay and under and behind most equipment are dirty with debris. Hood vents and nozzles have grease build-up and dirty filters.

Inspection done 3 p.m. September 30, 2020

Reinspection is required

Critical violations: Large bucket containing vodka sauce at 53.7 degrees while stored on preparation counter (corrected – product discarded). Cooked chicken at 64.6 degrees while cooling on tray in storage rack stored in front kitchen for “maybe an hour.” Chicken was not placed under refrigeration to promote rapid cooling to at least 45 degrees or below (corrected). Three employees observed not wearing masks (corrected).

Violations: Glass-front cooler storing salads and deserts lacked thermometer at time of inspection.

Layla’s Authentic Spanish Restaurant

Inspection done 12:30 p.m. October 1, 2020

Critical violations: Approximately one and a half cups of garlic and oil stored at room temperature (71′F) in food preparation area (corrected – discarded).

Large two-door cooler containing meat products operating at 66.2 degrees (corrected – products removed and either frozen or put into another working cooler – cooler taken out of service).

Violations: Cases of barbecue sauce, cases of single service items and canned tomatoes stored on floor in kitchen. Raw unsealed wooden board used as shelf in chemical storage area – not easily cleanable. Box of dirty wiping cloths stored near mop basin, drawing small flies.

Table-mounted can opener blade area dirty with dried food residue. Meat slicer blade and blade guard dirty with dried food residue. Bottom of white tub container holding clean utensils dirty with food soil and water. Exterior of large container holding raw rice, bottom shelves and interior portions of doors on flip-top cookline cooler, and door gaskets of several coolers dirty with residual food soil. Mop basin contains garbage on drain grate and plumbing associated with three-bay sink dirty with food soil.

Fruit or small flies present in mop basin and bananas stored in crate. Wall area around and under three-bay sink and chemical storage area dirty with food splatter. Small space fan located near flip table cooler dirty with dusty soil. Premises lack shelving and has disorganized storage.
